A tin of rice pudding as I had a shower on my lunch break, then realised I had a call, so needed to grab something quickly and there was only a crust of bread left. OH has gone to the supermarket for us and his parents, so we shall see what he comes back with.

Peanut butter cookies... fresh from the oven. And there's possibly some cookie dough that doesn't make it INTO the oven. I'll atone with a salad for dinner.

Lunch was actually dinner, because these days I can't seem to find the time to eat (hooray for School closure and a week of break starting tomorrow!), but it was a cucumber, greek yoghurt and dill salad and vegetarian burgers (technically, patties - no bun).

Still the same for days here, as the standard cheese roll and apple suits so many situations: WFH, walking or, as today, an attempt at shopping by car, so as to carry more in one trip and try a 2nd shop nearby if the 1st has too little of what we need. I did this for the 1st time a week ago and only had to wait 12 mins to enter the nearest large Tesco, but they had less than half of our essentials so I proceeded to Waitrose where I had to wait over 35 minutes. They should put up signs with estimated waiting times but today I will go armed with lunch - and reading material - so prepared for the worst.

Couscous and vegetables salad, topped with two soft-boiled eggs and some greek yoghurt. I wasn't really hungry, so I went for the quickest thing I could think of, so I could do a coffee (which I was craving) after. :)

In today's incarnation of 'Forrest's attempt at healthy living', lunch was a carrot, leek, tomato and butter beans stew, with smoked paprika and oregano and topped with greek yoghurt. (I seem to be noticing a pattern there. My slight obsession with all things Ottolenghi may have spilled over into all of my cooking...) I dare say it turned out so well, that I was tempted to have another serving, but ultimately decided to leave half for tomorrow, because sometimes it's so nice not to have to cook.
There's no dessert, I ran out of dark chocolate, so it's followed by just a coffee. :)

Forrest, you are doing so well. What healthy eating. We pushed the boat out - poussin, potato salad and mixed salad, strawberries and yoghurt. It was a late lunch in keeping with the holiday spirit.

lynette , thank you, I try. I realised how awful I've been eating lately, and now that I have the time - and thus have no excuse - have decided to make a conscious effort about it. However, today is Easter and (although I don't really celebrate it) that calls for a little decadence, whatever that may mean to different people. So my lunch was kind of a brunch, and not particularly healthy, but I'll make up for that with a salad for dinner. :) Baked beans, greek yoghurt, za'atar, 2 soft boiled eggs and some toast (cut into strips for dipping into the eggs, which is a personal favourite way to eat them!). Dessert to follow: it will be a hot cross bun, toasted and lightly buttered; maybe some jam too. I also predict some (more) coffee in my near future.

Lunch was another picnic but this evening I home made pizza and it turned out great. Tomorrow I am trying bread rolls!

Everyone else's lunch is so interesting and innovative! Mine, much as I enjoy it (given I'm always hungry), is functional, whereas evening is when I/we have our main meal so far more variety and substance. I know that's against nutritional advice but saving the main meal of the day until I've finished running around suits my lifestyle and it's carb-heavy, too, as are all my meals, as that also works for me.
