I often stay at the Premier Inn, Holborn. But as mentioned above, even Premier Inn has become very expensive. I usually pay around £150 a night (and now they have started charging an extra £10 if you check in before 3pm!).
Location is great though and pretty much walking distance to most theatres. I love walking to the National and I often stop off for lunch / dinner along the way.

I'll go wherever is cheap/good value and close to a station for easy access to the centre.
For example, my previous involve (other hotels also nearby most of these):
Travelodge Acton (North Acton - Central Line) Premier Inn Harrow (Overground/Bakerloo - Kenton; Metropolitan - Northwick Park) Park Plaza Park Royal (Park Royal - Piccadilly; Hangar Lane - Central) Canning Town Premier Inn (DLR/Jubilee- Canning Town)

One consideration now that the hotel prices have risen, it can be much more cost effective to book somewhere slightly outside the centre and to just jump in an Uber.
Now I’m based in London I don’t track deals as closely as I used to do, but Croydon is still worth checking for hotels. Fast trains all night from London, lower prices, and an easy walk from the station.
Student halls over the summer period are worth investigating as well.

I like to get to London for a mat-eve-mat-eve two dayer every couple of months, and usually opt for Travelodge or Premier Inn, but these have actually started to get way too pricey for what they are.
Does anyone have any recs for cheap and cheerful places? Doesn’t have to be in the West End, I’ve happily stayed as far out as Excel before.

I’ve merged your post into this thread, hopefully some useful recommendations in here already but always happy to hear any new ones! I was looking recently and noticed that easyhotel Victoria was as low as £76 per night if you join their free loyalty club. Also the Imperial Hotels group, several properties all based around Bloomsbury, have singles for around £110 again if you join their free loyalty club (these were midweek rates booking a few weeks ahead). Ive also noticed that the Premier Inn in Chiswick is always much cheaper than central but the location is apparently not that convenient.

You must have been feeling my thought waves as I was about to make a very similar post! My go-to has always been Premier Inn Holborn. It was usually pretty low cost, clean and convenient. Very easy to walk to all West End theatres, Covent Garden and only about 20-25 mins walk from the National. I have always loved staying in Holborn as my tradition after an evening show is to stroll back to the hotel and stop off at Amorino for gelato. But as you say, Premier Inn has become ridiculously expensive for what it is. Looking back, rooms have doubled in price over the last few years even with the same booking notice period. For my next trip I’ve booked Thistle at Holborn instead. I managed to secure a room there for an extra £50 across two days compared to Premier Inn and it looks way nicer. I’ll share my thoughts once I’ve stayed there. I’d love to hear more options from others though as I wood really like to reduce my accommodation costs since I am in London at least every other month for a theatre break.

I used to do a London theatre two dayer every couple of months, stopped that now because of my health but I always used to choose the Z Hotels.
They are on practically every corner in Central London and were without fail one of the cheapest options if you want central London in particular. They are great if you are going solo but the rooms are tiny if it's a couple of you, they are very similar the premier inn hubs, but the facilities are great, you even get Sky TV and free movies.. At one time you got free wine and cheese between 5 and 7pm or something like that but i don't know if it still goes on. There has been another couple of hotels launch that have a similar but more basic concepts like the Zedwells that are in central london and come in a tiny bit cheaper but they are literally a room, not even a tv or coffee making stuff I don't think. I'd recommend the Z hotels for sure. The ones i used most often were the Soho one which is next to the Palace Theatre and the Trafalgar one which is just off the corner of Trafalgar square. But there's one right next the the Adelphi, one just up from the Drury Lane Theatre Royal, one just behind the Prince Of Wales, one one in Holborn, one just off Tottenham Court Road, one in Victoria...they are literally all over and especially close to theatres it seems.
For some reason I always kind of panicked about too much travel to my hotel after shows so I always picked somewhere that was within a 10 minute walking distance if I could.

We found Waterloo or Southwark travelodges to be the cheapest for Central London but even they've gone up. The ones near King's Cross aren't too bad.

If its uni holidays the halls of LSE in Holborn normally show up on Hotels.com etc, which are a decent (single) bed in a really central location but they fill up quick. Its worth searching all of their halls of residence for a good deal.
Also lots of the Victoria/Pimlico hotels have basic single rooms for about £60.
