I think that any book or film can be adapted for the stage, as stage basically allows total freedom and you can always find a way. Film is much more difficult because it needs "realism". A book that would be very difficult to adapf for the screen, even with all the available CGI, would be in my opinion "The Chronicles of Amber". But it may work on stage.
